So, ya know shrimp lo mein? That was my go-to takeout order whenever my parents got Chinese food. Something about those perfectly sauced brown noodles and the tiny shrimp just hit the spot every time.
This recipe is kind of, sort of, my take on those lo mein noodles. I know it’s not a traditional lo mein or ramen recipe—this is just something I dreamed up when craving those nostalgic flavors. But, of course, I had to make it gluten-free and healthier!

While this works as a fantastic side dish, it also makes a great base for a veggie stir-fry or your favorite protein. The sauce is my go to stir fry sauce. It includes a little cornstarch and thickens as it heats up and really coats the ramen noodles. Yum!
We use Lotus Foods ramen cakes for this recipe. These noodles are a game-changer. Made from organic millet and brown rice, they’re naturally gluten-free and packed with fiber and protein. Unlike traditional wheat-based ramen, these noodles are easily digestible and free from additives or oils.

Easy Gluten Free Ramen Noodles

Ingredients
- 4 ramen cakes (we use Lotus Foods)
- stir fry sauce
Toppings
- 2 tbsp scallions (diced)
- 1 tbsp sesame seeds
Instructions
- Cook Ramen cakes according to the package directions. Drain, rinse and set aside. Using the linked recipe above, make the stir fry sauce in a measuring cup.
- Pour stir fry sauce over cooked ramen noodles and mix. Top with scallions and sesame seeds and your other favorite toppings. Enjoy!
